We’ve got our recipes perfected for our core line of beers that we’ll be releasing in December, but we’ve also been hard at work on developing other recipes to be used as seasonal brews. This week, we wanted to give you a quick glimpse into our latest R&D brew. Behold:

We’re doing two versions this round; the one with the stickie on it is version 5b, for those who can’t read my handwriting (which includes me). And yes, that says ‘007’. It’s actually the code for the yeast we’re trying on this one (a dry English yeast), but I thought it was well timed, what with all the Bond-Heineken commercials we’ve been seeing lately.

What you’re seeing above is a base oatmeal stout fermenting away. In a few days we’ll throw some coffee in there and see how it turns out. We’ve been trying out a ton of different coffees to find the best fit with the flavors of the stout – the picture at the head of this post is from a cupping we did recently. I think we’re honing in on the process quite nicely, and I can’t wait to see how these batches turn out.

Also, the coffee we’ll be using will come from a local Nashville shop – we can’t release details yet, but we’re super excited to be working with them. Hoping to release this beauty in early 2016 – stay tuned!
